It's more like 6 or 7 that are completely finished since they're about halfway through a 155 chapter part, but the second half is still bad. You'll still enjoy it it's just that the bad translations make everyone's personality the same and they mistranslated important stuff, and they also got the main villain's Stand power completely wrong which led to one of the biggest memes in the English fanbase outside DIO memes. The good first half should pull you through the second half though.

This stuff is basically why Part 4 and 5 scanlations are the way they are and why it'll never get any better.
Duwang came along first and everyone used it and never bothered to fix it it, and when someone came up to do it they didn't even do it properly, just fixed up duwang without bothering to crosscheck the original manga. Now its been ported over to color scans and all the fancy editing and HQ scans means everyone thinks its the best and no one will ever bother doing it properly, all this effort to overtake duwang as the most commonly used scans is pointless when its still duwang.
With part 5 it wasn't as comically bad so no one bothered, and now that people do its at a snail's pace because everyone is complacent enough to settle for the old scans, call part 5 shit, move on and not want to help re-translate it.

I fully expect PHF OVA/s, a lot of it was introspective and flashbacks, which wouldn't cost much to do since they can reuse footage from the Part 5 anime itself and the fights aren't as long as the fights Araki writes, so they wouldn't even be awfully expensive to make unless they make every frame painstakingly detailed and have to spend hundreds of work hours on a few seconds of animation.

What do you not like about it specifically other than Jotaro? Every part of jojo is different and unique in its own way even if they follow a lot of conventions set by the series, and a lot of people rank part 3 pretty low. Even if you're not enjoying it at the moment there's always the chance you'll enjoy the following parts, which are generally praised more highly. If you're just sad about the whole thing with hamon vs the undead being gone then yeah you'll just have to deal with that.

Part 3 is weaker than 1 and 2 in the anime but that was mostly the shift in style, it's still enjoyable but not as much as what comes before and after. It was pretty experimental and is the source of a lot of shonen tropes that have lasted to this day. And Jotaro doesn't really change that much, he reappears in later parts and is a much better character then since he's mellowed out a bit. The first half of part 3 is basically villain of the week, and although the second half is as well the Stands are really inventive and the fights aren't all solved by punching, there's a lot of creativity there. Part 3 was basically just Araki testing new ideas for how to write manga, some hit and some miss. It does get better though, just give it some time.

How far are you into it? Jotaro seems like a bit of an asshole to start with but he matures a lot through the series. He is a pretty big contrast to Joseph and Jonathan though which does make his introduction kinda jarring, so I can understand your sentiment. If you love stands though you should definitely stick with it, they only get better as the series progresses and the part 3 stands were really just a test run for what's to come later.

Part 3 was super experimental and Araki was very inconsistent with Stands until about halfway through when he finally settled on how they worked. That was just one such thing that doesn't gel with the system he settled on.
It's never stated if Holly's went away, it just stopped growing rabidly so she could finally learn to control it. She still had her Stand it's just that she's never relevant again so we never find out what it did.

To be fair, you have a point there, but I honestly think out of all the shady characters so far, he'll be the main villain. I think araki will take a different approach in part 8, similar to part 4, and have the main villain not show up for a good while. Joubin, Karera and Damo aren't going to be it for a number of reasons I feel.
It all has to do with the context of the flashback, which I feel is the most important thing leading to the theory that he is the main villain. Out of ALL the people who've had a huge impact on Gappy, it was THAT flashback man. And he didn't look all too friendly either in those panels, I doubt he'll be an ally. There's just so much mystery alluding to him in a part practically MADE out of mystery that I think he'll be the final link that needs to be made for the story to go full-circle, I can't see that happening for Damo or Joubin or Karera.
