Well for starters, who says the other world necessarily has to be fantasy? It could be sci-fi, or even a mundane world just like ours in another universe.
Furthermore, why does the MC necessarily have to be reincarnated or summoned into the other world? Being limited in his ability to affect the other world could be interesting. For example, maybe the MC can only communicate with a single character in that world and has to guide her using only words?
What I'm saying is, what ifa boy falls in love with a girl.
Unable to confess, he is gifted with by a deus ex machina with the girl’s phone number. Never minding the strange area code, he immediately calls her, and is overjoyed to find out that she has a crush on him as well.
But, the next day, when he recounts the previous day’s confessions to the girl, she only looks at him with a perplexed expression. Mushoku Tensei and arifureta kind of make the MC work for an ability, but the thing is, in both cases they get too powerfull and too quickly, rendering future endeavors pointless.

The sorcerer fucked up and summoned humans, they are no more, no less, just humans. No abilities, no extra life, no re spawning, no time lopping. First chapter had the friend getting killed by a giant arrow that pierced half his body away. Now MC have is forced to be a soldier, trying to survive the war and this new savage land, with no special ability, and if he dies, he dies. He must live and find a way back to his sick sister. MC uses his war funds to buy poison and antidote, slips the poison into a goblin´s drink and saves him. Just to get an ally, the goblin is pretty bro. Basically a fuck you to isekai.

MC arrives in a fantasy setting and discovers he has the ability to predict all of his enemies attacks, knight of 1 style. Quickly becomes a master swordsman and finds himself completely kickass gear, saves the town from some threats, etc.
But there's one problem. Even though he's the best around, people have been spreading all sorts of rumours about him and none of a whole truckload of waifu-bait characters want to be near him. Becomes a story about how a guy tries to get into girl's hearts simply by being more powerful than other guys, but fails, because he's missing the other details of human interaction.
Maayybe he gets to hook up with one of them at the end of a cour or two. I'll think about it.

Honestly, not really, the thing is that the way modern construction works is way different than what they did back in the day, and you probably will have to learn everything again from the get go to get used to how they do things. Really, modern civil engineers depend on all sorts of tools, references and stuff that make it hard to work without them in the past, specially in the designing of stuff. The main demographic for that genre involves failures at real-life would wish to self-insert as the main character who escapes to a different world and does well. That's why a whole load of them (especially reincarnation ones) have hikki's that suddenly become alpha because the new world is rpgesque.
The only thing that could be done to save the genre is to make it very fucking slow. It's always either big time skips and then MC is suddenly op or it's just bullshit MC is op from his advent.
It would have to have reasonable progression but still give the readers that feeling of the MC being stronger than the rest which can't happen in manga or anime due to time and budget constraints and hence why that genre is most specifically seen in light novels due to it being the most easiest medium to express it.
People want to see characters develop but that just isn't possible without making them really fucking op for bullshit reasons.
