No, basically the entire series had been setting up the Yuuta and Raika together with Sora having a 1 sided crush on the side that got little to no focus. Then suddenly in the last volume the protagonist changes his mind and goes full on Sora despite never returning her feelings (Nor hinting towards) once in the entire series

That's a little different. The original run ended in 1980, a long time before Ishinomori's death. Ishinomori for whatever reason just ended the manga after concluding the arc that he was doing at the time and never bothered drawing the final arc, only keeping some notes about it. He drew one extra arc afterwards (1985) and a one shot in 1992, but it's not like it was in some continuous run that was interrupted by his death. He hadn't really done any significant with it since 85, so it's likely that he never intended to draw the concluding arc.
It's not really that odd. Many of his series have very open endings.

You're a moron. Even the vast majority of young adult fiction writers in America are above 30, and that stuff is essentially equivalent to light novels, just without the pictures.
People do what they're good at or what they enjoy doing, even more so if makes them money. Just because somebody is 40 years old doesn't mean they suddenly develop an interest in deeper stories, or acquire the skillset to even do that.
Light Novels aren't high literature, but there's no reason for people to stop doing it just because they get older, especially if they're successful. I'm sure Kamachi will be writing LNs until the day he dies, despite starting in his late teens/early twenties.
