I like it a lot and no, the story does not continue to be "haha he wins with one punch all the time".
He's the most powerful character in the series, so all of his conflicts arise from other sources than raw strength.
And then there are the side characters which arguably get more development than he does.

The whole point of the show is trying to understand Saitamas struggles. Not the simple "Will I be able to beat this enemy?" but the consequences of his existence and how the world reacts to him. And thats super entertaining imo.
