Ok /a/, I watched a couple episodes back when I was a kid, and I enjoyed them, so I had decided to take a trip down memory lane and watch the series now that I had a bit of free time.
Then I found out it's 800 episodes long and still ongoing decades later.

How do I even begin, is it even worth beginning at all?

The thing is I am a completionist by heart. If I start something, I won't let it go until I'm through with it, and something nearing the thousands eps is a big commitment.
How does it age? How are the newer eps compared to the older ones? Is the filler worth watching? How close is it to actually end?
I have too many questions.
Conan is absolutely worth watching. If you enjoyed the older episodes, you will certainly enjoy the newer ones, especially the plot ones. Seriously, the plot episodes in this show are just so ridiculously off the charts good it's not even funny.
The hard part is that it's a big time investment because the series doesn't really start to get going until episode 129, with big breakthroughs every hundred or so. But if you like it then this is what adds to the suspense that makes the show so great.

It definitely ages well. The older episodes certainly have a different tone to them though and I feel like a lot of people prefer the old 'filler' to the new 'filler' but really if you enjoy mysteries you will like pretty much any episode, old or new.

That's pretty hard to tell. With the amount of loose ends right now I could easily see it going for at least 300 more episodes.

I (still) enjoy the 10th with Mai Kuraki's Growing of my Heart. It just happened to be taking place during plot but the OP itself felt like it was ushering in a new era of Conan with how positive and fast-paced it was (especially compared to earlier OPs).

Well maybe if it was earlier on in the series it would have less impact (on the romance plot and her character). However, considering how much romance has been done through his original body then strung along through Conan, one can imagine the shock that would bring (despite her constant doubts).
The other reason provided is she'd be a liability in the fight against the BO. There may be a few who play favorites due to the past (Vermouth) but if Ran decides to "help out" there's no way to reliably keep her in check.
