I don't mind the ending of Dragon Ball, much less the epilogue, but Toriyama is a twisting motherfucker, who loves subverting people's expectations. So I fully expect him to go through with the same epilogue; especially if the Japanese fans are also vocal about hoping it changes.
If anything, I think Majin Buu will get some development, since Toriyama himself made a change to his origin, about him actually being a being that's been around, 'since time immortal', that just goes through cycles of rampage and hibernation.
If there's a U7 equivalent of Majin Buu, then I could see him getting a power up if the two of them fuse.
As for Uub, based on what Toriyama says about him being 'pure evil' as Kid Buu and quickly getting his soul purified and reborn, it's like he's already been reborn and Super will end with him getting a cameo, depending on how they want to go to Dragon Ball's epilogue or not.

In the moment Vegeta stopped to talk trash to Freeza, an opponent who had already lost his special form and literally came back from hell for revenge, is all it took for Freeza to nuke the planet.
Whis already warned Vegeta about hesitating and Goku about letting his guard down, and surprise, surprise it's due to those reasons both of them get fucked up.
Even though Goku gets a do-over it's still humiliating and anti-climatic as fuck that for all that fucking training both of them went through, Freeza fucked their shit up.
