4+5+6+7 all have interacting and arcs with the main antagonist that change parts of the story. They're constantly interacting with the 'final boss'. Part 3 is literally a great big round the world adventure to fight the final boss.

Episodic means that the story is divided into small segments that are connected by the plot, but only thinly. In every part, the villain of the week is only important for his fight, and is related to the story just in that he's working for the main villain (if even that). The fights are clearly separated.
Interaction with the main antagonist throughout the part doesn't make it less episodic. Think about GitS:SAC, there are SA episodes, and Complex episodes that advance the main story, which are distributed among the SA ones. It's still episodic, but advances the story inbetween the small stories. Cowboy Bebop does the same, with some episodes being related to the main plot, but most of them are just self contained stories.
Having an episodic story with the main plot scattered doesn't make it less episodic than having the main plot at the end. They are just different type of stories.
