I want to play a game about managing a store. It seems difficult to find something I really want, though.
I played Recettear (pic related), and I love it. But it's not very realistic, and the store management aspects are super simple. All you do really is put out an item and set a price.

I gave Capitalism a shot for a few minutes, but it seems more about managing a large corporation. That's fine and all, but really, I just want to focus on one store.

I tried The Guild, but that feels more like a medieval political life simulator, running a store isn't the focus.

Does anyone know of any games focused solely on store management? Even if the game is mostly spreadsheets, it's still something. I really want that "I'm working 60 hours a week with no overtime and two of my cashiers just quit in the middle of their shift again" feel.

If I ever have a 3DS I'll try it out. From the reviews it sounds enjoyable, but like Recettear, probably not as "deep" as I'm looking for.

Part of the Torneko chapter in Dragon Quest IV is about managing a store. Your wife manages the store while you hunt for treasures to sell on it in Torneko no Daibouken, but you should still try it out.
