Star Ocean 2

If you have played Fallout 1 I recommend you planescape torment. If you want something "new" try Divinity original sin.
Deus ex for sci-fi and cyber punk. Arcanum for steam punk.
But I bet you've already played them.

Lost Odyssey, this was one of the last jrpg's that I really enjoyed.

Great game, a shame that it's an exclusive
Chrono Trigger
Eternal Sonata
Mother 3
Dragon Quest 9
Shin Megami Tensei: Strange Journey
Disgaea 3: Absence of Justice
No idea if Journey is an RPG or just adventure but I'd recommend that too.

Vagrant Story
Undertale
Pretty much everything made by Bioware before DAII and by Obsidian up to the Stick of Truth. Note that for Obsidian: Sith Lords is still my favourite RPG ever but absolutely requires unofficial Content Restoration Mod, or whatever it's called, Alpha Protocol is boring stealth and bad action but a good RPG, Dungeon Siege 3 I haven't played, but heard only bad things about it, the first expansion to Neverwinter Nights 2 is better than the game itself.
Also everything by former Black Isle Studios and Troika (Troika has only three games, and all are GOAT in some way).
These are the classics almost everybody loves, everything else depends on taste.

You didn't specify what type so I'm just gonna post my favourite FF.
Not OP but could people recommend me RPGs similar to Paper Mario, Earthbound and Undertale? They all have nice settings, style, comedy and have interesting gameplay (mostly Paper Mario & Undertale when it comes to gameplay).

Earthbound
Mario & Luigi: Superstar Saga
Mother 3

All the jRPG's in that thread. That really rumble my jeremies.
Anyway, check out Arcanum.

Shadowrun series that's been running recently.
The first of those (Shadowrun Returns) can be a bit messy, but Dragonfall is definitely good.
(Hong Kong is still on my todo list)
Also, Wasteland.

I never got how anyone can prefer the sith lords to the first kotor
Depends what sort of RPG's you are looking for, more western or Japanese ones.
I suggest playing Shadowrun for the Genesis. The only problem is the slow start in which you have to grind out some runs to get enough karma to upgrade some skills so they can be used out of low level runs and nuyen to purchase some equipment to not get killed by the lowliest of gangers.
After the initial beginning hump it really takes off with infiltrating corporations and hacking the matrix while either leaving like nothing happened or crashing the CPU.

Geneforge, avernum, avadon. Anything by spiderweb software
