Diablo-likes have god awful combat imo but the sense of progression and looting is really enjoyable.
What are some good non-Diablo-likes that capture that?

That's a good suggestion, I've played a few hours of 2 and enjoyed the progression a lot and the gameplay's solid, might go back to that, thanks for reminding me.

Try some Roguelikes where dying doesn't automatically mean losing everything forever.

Cataclysm: Dark Days Ahead (you may die, but the world remains - so you can at least get your stuff back eventually)
Maybe even Nethack, but it's probably a little too harsh for your purposes.
Not sure if this counts, but Borderlands, I guess?
