Outlaw Star, I guess. I didn't like the anime, but many like it, so I suppose you can give it a try. I think it's generally regarded as "good".
Also gonna shill a bit for an anime that doesn't really have any catgirls, but occasionally, the MC is turned into a catgirl for a few seconds purely as a visual gag in Magic Knight Rayearth. So no real catgirls, but gotta take every opportunity to advertice it :3

Utawarerumono has a lot of animal people. I don't know if any of them are cats specifically, but looks like it from a picture I found when I googled it.
It's a pretty good anime, but it shines through that it was a VN in the dialogue, it feels a bit artificial.
