Don't go physical with Sylveon, 65 attack is not enough to go mixed. Hidden Powers are mostly to pick off specific double weak counters to your Pokémon, like in the case of Sylveon HP Fire for Ferrothorn and Scizor, and HP Ground for Heatran. They are not general coverage moves against types you are weak against. If you don't want to breed for those, you will be better off if you just accept that those Pokémon will counter you and team build around it.
Sylveon does not have a good offensive move pool, but it might be worth considering slapping Wish on it instead of a hidden power. You should be clicking Hyper Voice in 90% of cases, anyway, since it is the reason to even use a Specs Sylveon. Wish would let you do something if you have to sacrifice Sylveon against a counter or if your Specs get knocked off. Heal Bell could do something similar.
Offensively, I'd say your other options are Shadow Ball and Hyper Beam. Shadow Ball would hit weaker on a super effective hit than Hyper Voice would neutrally, though, so that is garbage. Hyper Beam should only be used to finish the opponent's final Pokémon, or you are just giving them a free switch in and a free turn of set up to sweep you.
