Saber: Rama - He's useful, does a lot of damage if buffed, and his design is nice. His VA and personality has grown on me.

Spartacus is a beast; EX endurance basically makes him unkillable by everything but his own NP, and any damage he takes only makes him over-heal and grow into a mountain of tumors that gets faster and stronger. Even when hit by several NPs he can't stop moving.
Only problem is that he's a living bomb type servant that everyone hates dealing with and can only make the situation far more difficult.

I don't think that's going to be too much of a sticking point between them. I don't think Tamamo would do morally questionable things behind her Master's back and against his wishes like Medea would do.

Tamamo wants someone who completely relies on her, and who she can serve faithfully. She's actually sort of like Gawain in that sense, though she doesn't have any particular standards beyond "has good intentions".
Meanwhile Shirou's more of a fan of an equal relationship. This worked great for Saber, probably wouldn't do so great with Tamamo.

The idea of CCC final ending being a bad ending for your servant is a misconception, and your servant doesn't hate Sakura. Sakura is one of your bigger allies in the game, your servant acknowledges your relationship. It also helps that you were never really dating your servant, outside of potentially the servant endings. It ended as a one sided romance at worst.
Tamamo also probably wouldn't try to date with Shirou any more than she'd try to date with Guda, so its not really an issue. She wouldn't hate him, but their alignments aren't entirely compatible.

Stats aren't everything, there are servants that can rely just as easily on skills or NP as well, and IP is a very broken skill. Her NP would be easier to maintain than Excalibur most likely, and when combined with IP she could most likely survive against Heracles enough for Ilya to call it quits on a whim. Also they'd probably be teaming up with Archer at the time, which would help. They don't have to win, they just have to last long enough for Ilya to get bored of her little "hello" like she does in most routes.
