Nigga, you gain like 20 points of stamina between 20 and 40. It's fucking nothing.
40 vit also nets you an extra 10-15 ABS on average over players with base vit, which is significant.
Also, if you're looking at the mudgenmonkey creator, it isn't accurate for flat defense. It doesn't actually give you the full value per level of vit that you get ingame, so your actual flat defense will be much higher than the character creator predicts.

Upgrading armor is indeed not worth it unless you just have spare shards to burn.
You can buy large shards in infinite supply once you get the Bastille Key (or do it the other way, whichever works for you), so don't be afraid to dump upgrade materials as you please.
Chunks will be scarce for a while, but you can eventually buy them infinitely, too.
The only thing you have to be judicious with are petrified dragon bones and twinkling titanite, as you only get enough guaranteed drops for 3 or 4 weapons per playthrough and need to farm the rest.

Damage is a bit subpar, but nothing awful.
Counter damage is hilariously high, makes up for the damage, most of the time.
Reach is great, Washing Pole tier stuff.
Moveset is interesting, though seems pretty easy to dodge.

Well, the answer every time I asked something back when the first game came out was to "git gud". And that inevitably drove me mildly insane. Only weapon I can think of off the top of my head that is better Heavy than Refined is the Pickaxe.
As a pyro will I get more out of my weapons if I make them dark instead of chaos because not many people have dark resistance?
Luck improves bleed, right? How much luck is generally considered satisfactory for a bleed build? I'm finding that I can't reach 40 on anything by 120, and I started as a Mercenary. I'm not sure if that affects anything.

Depends on your build and the weapon. If you're high str then heavy infusion will probably give you more damage. Hell, even at base requirements for a bunch of weapons, Refined offers the most damage output because it's so "balanced."

Luck improves bleed/poison by literally a few points.
You get 5 luck for each hollow weapon wielded (so, max 10) past 15 hollowing. So you only need 30 if you want to hit the softcap.
It should be easy at 120SL. Where are the rest of your points going?

You only need 30/35. You gain 5 luck with a hollow infused weapon, and hollow has slightly better scaling than quality.

Sorry, it sounded like you weren't sure since you didn't mention what weapon you were using. It really depends on the weapon, if a heavy/sharp gem will do more damage. I don't think there's a single weapon that sharp will do more damage than refined if you have the points to spare.
Post your inventory screen and people can diagnose your damage problem.
