That's what I assumed as well, Brador put down Laurence and they had to keep everything hush-hush since the leader of the church turning into a beast bevause the blood would be very bad PR.
The bloodletting beast theory was always dubious and the fact that people cling to even after the DLC is just sad.
So what his Japanese name is "Host of the Beast Blood", that doesn't mean anything significant except that the beast is a host to the blood (and parasites). I don't know why people seem to think "host of" implies the origin. If anything the connections to Loran Silver Beasts exploding into maggots and even Vermin are more interesting but everyone is stuck on BLB=Laurence. Even though the skull is far too small and we have actual Laurence in the DLC.

Byrgenwerth found Kos washed up and dead, the villagers probably could have found her at any given point. Plus it could've been caused by her lingering conscience, the Orphan's, or maybe even some of the parasites inside of her. But it was probably the case that they were fish folk long before Kos washed up dead. She probably lived in the waters around the Fishing Hamlet and scarcely ever strayed too far, so they had some history with her. She is to the Hamlet what Dagon is to Innsmouth.

I've beaten the game twice now, STR and Skill builds, spent about 40 hours playing (did all the chalice dungeons to)

You could farm for the Logarius Wheel by collecting the Wheel Hunter's badge in the main game. Also the Amygdalan Arm has some arcane on it, but whether or not it's just there to prevent it from being buffed (like with the Blades of Mercy and the Burial Blade) I do not know.

I think you're making a few assumptions, but it makes perfect sense as much as cosmic fish monsters can make sense.
I never got hints of interbreeding. At most, Kos parasites infected the villagers, turning them to fishpeople, or the Insight naturally gained from proximity/communication/worship/infection from Kos started transforming them, as Insight is clearly transforming Willem. Burgertown gets in on this because spooky shit gets them hard for knowledge, raids everyone's skulls for eyes, villagers/Kos/Orphan curses the hunters as a tradition to fall to blood-addling and the Nightmare.

Skill/arcane is busted with the Burial Blade and BoM having shit arcane stats, though pure bloodtinge is kind of a thing. Since everyone quicksteps the same and there are no equip load, "builds" only really dictate what weapons you'll be able to use and how you can utilize a select few niche weapons. The wheel for example can be used by both a pure strength and a strength arcane build, but in different ways.

The whole hamlet is a pretty perfectly off-brand innsmouth, the snail girls are the deep ones, the fishmen are the innsmouth hybrids, and kos is a mother hydra/father dagon figure. Huh, weird. It just worked really well for me. High damage delivered quickly, and only at the expense of some range. R1 mashing was brutal, nobody expects to catch a transformation attack to the face, and it could pull off charged R2s for a backstab quickly. Wheel hit hellishly hard with all four revs on, but that was also hazardous as hell.

ideally you'd use blunt gems to get the most out of the strength scaling but you could go 50/25 and use nourishings to try to get more milage out of the tricked form, though your damage won't be too bad in tricked with blunt gems

BB PVP is also disappointing. You don't even know if somebody is realistically capable of killing you until they land a hit, there's no roll cancelling, the lack of poise make gank situations running away and fishing for interrupts, because viscerals scale with SKL SKL has a huge edge over every other type of build (it also has the best PVP weapons), healing is simply too fast to punish consistently and if somebody claims to consistently punish with an interrupt on reaction online they are lying, and there's generally way less risk involved with parrying than there was in other Souls games.
If you play a lot of PVP in any Souls game you're probably an idiot, as it's all easy, incapable of transition to offline competition, and profoundly unbalanced, but the PVP in BloodBorne is especially bad.

Chalice dungeons are better, but only when you get to depth four and five. At that point the enemies and bosses drop enough echoes that you can just buy all the bullets, vials and shards you'll ever need.
Is the Beast Cutter just bad?
I'm trying to make a pure STR build and I really wanted it to be my main weapon because it feels so good to swing and it's sound design is elder god tier.
But, it just doesn't have the stats. I've got Axe, Hammer, Pizza Cutter and Beast Cutter all at +6 and it just doesn't compare except in the rare situations that have a bunch of enemies just out of reach. It's like the threaded came but without the useful quick attacks and thrusts in untricked mode.
All its attacks are blunt, which is the worst damage type in the game, almost everything has higher Blunt resistance than Phys/Thrust and nothing is particularly weak to it. Plus if you use Blunt gems (I even went to Hintertomb to get a early Blunt Triangle) you don't even get increased Viscerals. It's scaling as also ass (Pizza cutter is B at +0, Beast Cutter only reachs that at +9 I think) and it's quite stamina hungry.
I want to love this weapon, but it's hard to resist just using the Pizza Cutter and Hammer. Can I make it good, or should I stick just swinging it around the Dream and at easy enemies while using better weapons as my main.

There are definitely better strength weapons. The Whirly is possibly the best one in the game. It all comes down to if you value fun or functionality. If you like the Beast Cutter, stick with it. It crowd controls like nobodies business, the giant sweeping R1's, the hamslammer R2's. And the backstep R2 has I think the longest reach of any move in the game.

No, the run I suggested is best early game. Mid game the guy in from of Ludwig is the best. Late game, just clear the mobs on a single layer of a depth 4 or 5 chalice and buy them. Those chalices give ridiculous amounts of blechoes.
