Start over with Mod Organizer.
Your mesh at the card is purple because SMIM overwrote the meshes in your game, disabling it leaves it without proper references for the Texture. Mod Organizer doesn't have these kind of Issues.

I'm always playing with it, that's kind of what it's built for. But the default settings are designed to be more than tolerable by default.
If there's something in particular you want changed it's probably an easy edit. But maybe it's just not for you.

Backup your mods rar files, delete everything, reinstall skyrim clean and then just install your mods.
Then run LOOT, make a bashed patch and you are good to go. Also add skse as executable to start the game with
Keep in mind, Mod Organizer uses its own skyrim.ini/prefs so make sure you edit them properly for ENB use(mod organizer folder/profiles/profile name)
