Roadhog is pretty easy to get used to. It's pretty much all in the hook and learning how to stay alive despite being a slow piece of shit.
Proper hook usage is just a matter of experience. Pretty much anything you catch aside from another tank should be dead in one shot, and you'll shit on most tanks anyway.

Of all the characters I regularly play, Mercy is the easiest in my opinion.
Mercy, Bastion, Torbjorn and Junkrat are probably the easiest. They don't really require aiming to be good with, mostly just positioning and timing.

Lucio is a shit ton of fun to play, and Mercy is pretty fun as well.
The challenge of healing itself is fun. The fun of coming to someone's aid to heal them up so they don't die, I don't know. I'm not even a sub and I enjoy that shit.
