Luck bane, boon can be whatever unless you're on Lunatic, in which case you'll want an offense stat or Defense depending on how many tanks you plan to use. My first time through Conquest only Xander could take a physical hit, and Kaze was my main mage killer so battles were pretty slow as overextending is not an option when almost no one can take a hit, so I'm taking defense, which made some of the early chapters in Conquest a lot less annoying, this also made it much safer to activate Silas' personal skill, which he needs active to stay useful on higher difficulties outside of Revelation.
Talent should be something you/your potential spouse can't easily get for your route since friendship seals can be used to reclass to a bunch of stuff, I'm taking Apothecary for Lunatic Conquest since I already did Ninja once and I can give a spouse Replicate and better tonic bonuses with this.
Spouse depends on what your talent is, you want to give them something useful, for instance your servant can keep their knife levels and get Kunaifaire to make those weapons more useful with Ninja. Backpack/support should be one of the servants/Gunter due to their personal, loading up on trigger skills like Aegis/Pavise, Sol/Luna, even Vengeance could be useful, all this assuming you're grabbing Nohrian Trust at some point. Their personal(and yours) also works for attack stance, which I abused to great effect early in Conquest Lunatic getting in tons of weapon rank for them while tanking hits and doing good damage to enemies.

The pots aren't that hard if you're careful and you can take your time on the chapter for the most part. Chapter 10 starts hard and gets harder. You have to split your party at least three ways, use all of your units to the best of their ability, and everything still goes batshit when the rivers dry up and the retainers and fliers start coming at you.

You don't need the grind DLC because there are challenges and you can scout, but if you just meant no grinding in general, I would go as far as to say impossible. Other than needing royals for the dragon veins, it's just a shit show of bad balance, mismatched numbers of units, and stage gimmicks. It's my least favorite SRPG ever.

Assuming we're not including dumb mods like Lunatic+, Reverse Lunatic and no weapon triangle, probably Shin Nazo on Lunatic. The beginning is already annoying as fuck on Hard, but on Lunatic you need to be monitoring your level ups carefully to ensure you'll have the stats you need to deal with the later shit, or sometimes even the next chapter. Yes, I'm actually treating resetting for less shitty levels a tactic for this game, that's how fucked it can get.

On hard you can probably get by with just the ingame grinding, or promoting things early if you intend to not grind at all. On Lunatic don't even bother trying to use anyone with a rough start, which means you'll be stuck with your servants, Gunter, Silas, Blue, and maybe Benny, Kagerou and Reina if they turn out well. Your main character will probably be over leveled as fuck due to the lack of other units worth using in the beginning, and you'll probably wind up using the extra space for backpacks like Arthur, Rinka and Charlotte.

Just completed a Lunatic run with my avatar and only the kids. It was honestly not that difficult. The only thing that really annoyed me was wasting time grinding out S supports so that I could actually get the children.

Most FE games are guilty of this, but for example one of the reasons why the Tellius games are my favorites is that it really feels like they gave a decent focus to most characters.
