My problem with racial diversity is that when it comes down to it, they're not actually much more diverse.
Now I know it sounds like bait, but ignoring what they look like, it's the same as it's always been - some factions are stronger or weaker in certain areas and lack certain unit types completely. Of course you've got Vampire Counts who get free reinforcements and Greenskins who get a stack of shit-tiers, but WAAGHs are fucking worthless due to how they act and necromancy is, well, not actually that different from mercenaries besides the fact that they're for post-battle, not pre-battle. It's slightly more diverse than before but honestly it's not that big of a deal.

basically two ways to go about it. Awaken bearsonlings, sack kislev and Karak Kadrin a few times and invest in growth (bottom skill tree) until you at least have warriors. Sack a place before razing it, but raze it every so often to have an area to recuperate. make sure you have a healthy stack every turn and constantly upgrade it.
Second way is to awaken at least two tribes, build a second army early and sack kislev until the norscan tribes are getting into the Empire.

"hard" is my normal in TW games, when I replay some faction I know well I usually crank it up to VH, legendary is just retarded cheating AI with nonsensically agressive factions.
