It's probably too late to nab a character or skill today for you, but if you try again after midnight you'll want to remember to "Challenge in their Castle", seize by approaching from the left like I mentioned above, and you can either buy one skill a day at a lower cost, or take a character for free and buy their skills from the logbook at the regular prices. Winning through any other means lets you register a character to the logbook so you can recruit them later or buy their skills.
They only come with the 5 they're equipped with when earned this way, your own Einherjar bought from the shop or registered after game completion will come with everything they've learned though, which is why I went nuts with skill grinding in Birthright in the first place.

Yes, you can just dismiss them from your army or delete them from your logbook.

You can if you want to, yes. And I would think if they're deleted from the logbook for whatever reason you can get that same character from the same castle again.
You can also update any kind of blue shield unit(Einherjar/Prisoner/Amiibo) so that if they die or get removed for any reason you can buy them again with those updated specifics.
What I'm unsure of is if you need to delete a character from the logbook to recruit it again for a different file, I do know you can't grab the same character from the same person multiple times even if they're updated in your logbook (and possibly for their castle), though if they change their castle by updating with a different file it should count as a separate character, and you can't recruit Einherjar/Prisoners/Amiibos from other players, which are represented by the blue shield icon. Anna should be fine though despite being DLC exclusive.

Well, you've just gotten Serra, so you don't have to rely on Vulneraries anymore to heal. Just use Sain and Kent as walls like normal, use Florina for the Mercs, and let Erk get some kills if you plan on using him. Sadly, Wil and Dorcas are kinda hard to use here, but there's no time limit so feel free to wait from them to get out of the starting forest area.

The only Birthright characters really in dire need of Rally Speed are Orochi and Tsubaki, the later of which is likely not seeing much use if you've recruited his daughter. Takumi's speed isn't fantastic, but he's not likely to get doubled as a Sniper, and you already said you're not using them near each other.
Kinshi Knight's stats aren't great but it's perfectly usable as a class the way it is.
