I think poise should be brought back, but not at the level it was in Dark Souls 1. I think that the combination of poise and hyper armor would make big tanky characters a lot of fun. I'm sure someone will say it would be OP, but considering how little stamina rolling costs, and how many invincibility frames you get, less tanky builds would still be able to compete. They would just have to actually learn how to out maneuver people and properly conserve stamina.

The estoc is good because it has the reach of the spear while being really fast. It could do 1 damage a hit and it'd still be high-tier thanks to those 2 factors combined.
The rest of the thrusting weapon class are short, very short. Exceedingly short, actually. Ricard's has less than half the reach of a straightsword's 1HR1. Despite having low range and a very limited moveset that only does 1 thing (eg. poke with low range) their damage is poor, so they don't trade exceptionally well. Their speed isn't terribly advantageous because most things with similar reach also have similar speed and deal more damage.
Also, the thrusting sword WA is useless. The backstep doesn't have iframes so it's about as useful as a real backstep in pvp (eg. not. You'll just get phantomhit every time you use it) and the multihthrust does about as much damage as a regular R1 but is slower and laves you much more open. Ricard's full WA flurry doesn't even combo in pvp, so if you catch someone, you do about 4 30 damage stabs and then they roll out before the real hit.
Rapiers aren;t the worst weapons in the game, it;s just that they basically do the exact same thing as straightswords, but aren't as good. They don't bring anything to the table that Anri's doesn't already cover. The estoc is a special case just because of its comically long range
