The enemies can combo you like in Bloodborne but your character uses the old Dark Souls movement.

There is an entire infusion that scales on Luck.
Luck is meant for bleed based weapons. It's better than bleed infusion by a mile since you can still buff the weapon with a bleed resin.
Hollow Infused weapons also give a +5 stat bonus to Luck if you're at 99 Hollowing. Having a hollow infused weapon and shield gives you 10 free levels in Luck, meaning you can level to 30 instead of 40.
It's an incredibly strong build when done right. Usually a hybrid of something else, or you can just go 40 luck and then healthgouge the rest.

Holy shit this game is full of terrible environments, why are there 3 different dungeon / tombs and 2+ water sections? The early game was fairly interesting but everything now is just dark, slow, poorly laid out underground sections

Too low for a caster build unless you like getting 2-shot. Probably pump either go straight DEX or STR with maybe some FTH for some buffs.
Raw is the best infusion early on if you're not pumping STR/DEX?

I really don't know. If they really wanted to make mound-makers unique and super interesting they would allow ANYONE in the world to interact with purple signs.
So a summon or an invader could call in a purple if they saw a sign while co-oping or invading.
