Essentially characters job points are tracked separately based on each character and each job.
Since the initial value is unknown you search for one of those first. Then you do a couple battles and search for the increased value. What might have screwed you over is that RPGmaker stats are "hidden" using the formula X*2+1. So if you start at 100 JP the value will be 201. If you do a fight and your JP increases by 1 you need to search for a value that increased by 2 because 101*2+1=203.
Since Race and Job EXP are increased by the same amount you will always end with two values. Once you find them change one to see which of your units values changed. If it was the job then you're good if it was the race then change the value back and change the other. It's worth noting that the value you change it to must always be odd to match the formula or the game will crash.
An easier method would be to search for the value of your Seeds of Knowledge, start using them and then search for the new value each time. Once you find it set it to 199 and lock it so you have infinite seeds then use them to spam job exp.
A third method that doesn't use cheat engine is the ex-patch adds a cheat menu to the castle next to the side quest board in NG+ that has an option to max level the entire parties race and job.

Got Phoe on my first ten-roll. Next ten sets produced a ton of Cute girls, especially Koo/Bisque, several Nias, and tons of Rudols. Does seem pretty generous with the Rudol/Rialdos though. Personally I just do 10 10-rolls a day so that I can maximize efficiency on all the daily missions. With Rachnera and Haru from my ruby gachas, Sharon, and a Lato I just got from sakuras and probably upcoming Fere and Halifah, I'm taking it pretty slowly to minimize waste on power-ups and care creams.
