In most typical RPGs you will be able to kill everything for the first half hour with basic attacks - in EO, they teach you that if your team is composed of five recruits clothed in rags and armed with daggers, you better take the situation seriously when you're up against a apex predator.

So I got Untold like 2 years ago as my first EO game, and started story mode on expert. I played it on and off until I got to Cernunnos. In EO5/EOU3/whatever tents will be usable anywhere in the labyrinth. However, unless the room/area is safe, monsters will attack you (surprise round, and the tent is consumed without healing you).
To make a room/area safe, a certain amount of random encounters must be defeated. The threat meter in the lower left corner will change once the room is safe.
Only small-medium rooms/areas can be made safe this way. If you exit the room, your progress is reset.

A game shouldn't be difficult for the sake of being a "pain in the ass". That's not fun at all and is more suited for survival type games like Don't Starve, or certain modded Minecraft playthroughs. The series has been difficult, but most of the difficulty comes from shit like squirrels who take your last Thread or not figuring out a boss's weak points. Not being purposefully a pain to play. Plus, the randomness of the encounters makes it worse. 3 encounters with those red fish and green spiky nuts are easy to deal with, but are way lower in difficulty than 3 Great Lynx.

As I see it, having to grind those extra mobs would be a fair drawback to otherwise far too cheap and flexible full party healing. Tents would still be optional, but would be an option for teams that didn't have a dedicated healer and/or were TP hungry.
I guess if I was really attached to idea I could suggest that a difficult random encounter would further to making the room safe than an easy one.
But that would make the mechanic even more complicated, which I think is the biggest problem.

While leveling all 3 stances to 20 gives you a good chance of being in a stance, you want to have at least ONE stance skill so you can activate a stance in case none of them activate.

You only need one point to use a stance skill, and if you focus on a specific stance or make use of Peerless stance you won't need the other two stance activation attacks. Anyway, I'd suggest going for Sheathe Strike since the extra speed lets you activate Peerless Stance more quickly and Drawing Stance has what I found to be the more useful set of skills.
I'm not a big fan of Ronin in this game outside of using one for crowd control, and even then the one in my gathering team was originally in another class since Ronins are among the wimpiest frontliners in the game.

I played EO3 near the end of the DS life cycle and fell in love. I've sinced picked up EO4 and beat it. Didn't like it as much, but I still enjoyed building teams and killing stuff.
I'm now wanting to play 1/2. I assume the Untolds are the best route for that, right? Also - story mode or classic if I do choose the Untolds? Does story mode have significantly more content? Will I be missing anything other than an alternate narrative with a set team instead of a general narrative with a team I build?

Yes, the Untolds are way better than the originals as they're better balanced and have a bunch of QoL improvements. In EOIV, I've gotten a request to open some treasure chest in a dungeon in the first area. The dungeon is surrounded by those kangaroo FOEs. Is there a way to get past them, or am I supposed to wait until I'm strong enough to beat them?

I bought EOU1 right after I finished EO4 and needless to say, I was garbage at point assignment, TP management and strategizing. I made it to the Ant Queen before I rage quit and still haven't beat the game.
Knowing what I know now, I'm plan on going with an elemental damage based team, but is there a better way of building my team? What skills are key for Highlander and what grimoires should I aim for getting?

Highlander gets the Delayed/Cross Charge line if skills, Bloody Offense, Limitless, and Spear Assist.
It'll take some time to really kick in, but the idea is to Bloody > Delayed > Spear Assist x a few turns > Limitless > Cross.
I found it easier to give him a Charge Grimoire rather than feed a ton of points into Limitless.
Give Arthur maxed Dilution and Analysis for super elemental good times. Ideally you'll have him in the same row as Highlander and Ricky when you use Bloody Offense. You can switch him back afterwards if you want b
