honestly? don't worry about copying shit from other savefics. it's such a crowded fanfic topic as is that some way you're going to be broaching someone elses idea in some way
i'm not saying straight up steal another idea but if you come up with one that you like just roll with it.
as far as story outlines and shit, what i do is just jot down ideas for chapters as they come up in my head. i've always been pretty terrible at straight up brainstorming.
if you want to get into the swing of things the best thing i can suggest to get started would be doing little one off filler fics, use a snapshot of your characters at whatever point in the story you want and just write something, develop them in there. you can toy with a lot of their backstory just doing stuff like that because it makes you think about their personalities and motivations, and it's good practice to just write anyway.
and if you want to change something later, its filler. who gives a shit. it's pretty liberating.
