Instadeath is 100% avoidable if you know what you're doing, trust me. Once you do get good at the game and know some tricks to get to elpuri (first tier boss) safely, the actual fight is a cakewalk.
In fact, the only thing that will fuck you up is grinding to have great stats, because it will summon stronger uniques and monsters. Also the more days you're into the game, the stronger the monster become, starting at about day 20 or so.

I think flyboots are alright to be honest, it's cute that the fact you can't evoke them actually becomes relevant if something roots you, and you can't stop flying quickly either if an airstriker shows up.
Good to know about instadeath being manageable, it was somewhat off-putting because otherwise the game seems solid.

Dyna is the best in my opinion because it takes the UI from nethack 4 (you'll never go back to the regular nethack UI) and also makes the game a lot less bullshit by removing a lot of instadeaths, but also balancing it so you can't become a god with grinding. It actually more or less removes grinding but without being obtrusive.
You can also play the latest github version online without needing to compile!

I mean, I get that certain classes use different stats for spellcasting, that str probably affects melee, that con affects life and that presumably wis has to do with the fake-ID system but other than that I'm kinda in the dark.

A holy saga of the pantheon. Which is an item that they got from CLIVAN.
The thing about CLIVAN was that you could read holy sagas (that for crazy powergaming purposes upped your wis and int of 1/2 points each time) until you reached 50 int and then you could go speak to the dolphins in the cathedral to get your int in the 80s/90s so you could effectively read teleportations without wasting a turn and map the whole level with your ESP since it scales with intelligence. Not to mention valpurium/golden eagle feather every part of your equipment, even though that's a tricky one.
NewIVAN fixes that by capping the gains at about 20/30 int/wis. It's still pretty strong, but since you already need to use a wish to get the saga and several recharging scrolls (extremely rare) on a wand of mirroring or cloning (extremely rare too) and you can't grind for drops anywhere, it's still pretty balanced.

stunning increases fail rates for all sorts of things. Accumulating enough stunning will knock you out (some time beyond the heavy stun status) which is Bad
Dex and Str both go into the equations that determine how many blows per round you get with your weapons, in addition to determining accuracy/damage, so they're very important for classes that hit things. Charisma makes your pets more obedient and helps you resist fear. Wisdom used to lower shop prices but not sure if it still does in 4.0. Intelligence helps you activate devices more reliably. Dex helps your defense. Strength helps your carrying capacity. Con helps your hps.

Well, to sum up the status quo ante mortem:
Dwarftown was apparently on D:12. On top there was a ogre tension room right at the beginning of D:11 so I was pretty screwed. I named the minotaur Asterion and left him at D:1, he helped me through the path to the CoC. I found out what scrolls of increase melee damage did and used one on my sword right before that orc killed me (I thought they were a literal temporary buff to melee damage).

If you don't mind tedium and degeneracy, pre floor 30ish you detected treasures, mined, bought shovels to mine more faster, then kept mining the dense treasure floors as you cleared deeper. You'd start getting 6-25k per floor and you could buy weapons out of the shop, gamble shop, and walk between towns to reset shops to buy more. It's around the 30's where the exceptional item train starts to pick up speed as well if you just want to straight up kill shit instead of boredom incarnate.

Open your game options in = and set always small to yes. Do NOT do this in your birth options. Small levels makes it harder to escape later and there's more tough bullshit tighter which fucks you up.
It's not hard to beat the thief quest with most combos out of the gate with a little item help. You can jsut do stronghold to like floor 8 anyway then knock out thieves then the warg quest ezpz.

If you have trouble with fights, don't forget that blessing/holy chant/holy prayer increases your AC by 5. Scrolls of monster confusion cripple many threats surprisingly far into the game. Heroism will boost your shit hp and accuracy. Attack wands work as your launcher, allowing you to weaken enemies before fighting them. When combined with liberal illumination/phase door you can kite strong enemies to death as long as your charges/scrolls hold. Debuff devices like slow/confuse/sleep wands/staves can work agaisnt a surprising amount of threats if you need help while you're still needing basic essences. Use them a lot to get experienced with who you can cripple with what.
