the early game should be familiar to you if you come from WoW, minus the quests. Later on you're either going to be moving and dodging or dying.
Remember, you get xp for everything, so do whatever you want to level.
I always recommend warrior or elementalist as a first class, depending on whether you like physical melee or ranged casting.

which weapons are you using as a thief? Sword/x is a really nice weapon set to try, and either /Dagger or /Pistol work well with it.
If you're not entirely sold on the human male character, you could try deleting it and starting another race. I was actually in a similar issue way back when I first started. I deleted my old human thief and replaced it with an asura, and I started enjoying playing it a lot more.

If individual pieces of armor don't mismatch, they clip. If they don't clip, they clip with weapons. If they don't clip with weapons, they clip with a hairstyle.
