I wouldn't count on it carrying over to other pets. Reason being that they level up fast if you're fighting high level enemies.
If you're going Rogue, it's less of an incentive to go Archer C2 for Swift Step because Sneak Hit gives a flat critical % chance when hitting from the back.
I'm Archer C1 > Ranger C3 > Rogue C1 with level 4 in Sneak Hit and 1.5:1 STR:DEX. I'm basically 100% critting bosses from the back with my skills.
Also, 110k is pretty easy to come by when you're around level 50.

I was pure STR while leveling but as you get higher, the points invested in STR becomes relatively less useful due to weapons providing more attack and skills doing more damage. At that point, getting DEX will help you do more damage due to the 1.5x multiplier and also the bonus critical attacks don't get decreased by enemy DEF, it's just added to your damage for free.
Obviously I'm going to re-stat again once I have higher levels in Sneak Hit so as to not go over 100% crit on bosses.

I don't get what people mean by this. Your damage output is decreased by an enemy's defense. If you deal 100 damage and the enemy has 20 armor, you deal 80 damage. If a part of that 100 damage was a +10 damage buff, that's not 10 "free damage not decreased by enemy defense", that's +10 damage. There's no reason to segregate the top 10 damage and the bottom 10 damage in a 100 damage stack.

The only thing it really offers is trot and 2h spear (which is to say, 3x hit on large enemies). Hop2 offers spear lunge (makes enemies temporarily weak vs pierce if they aren't already), more finestra that allows you to keep it up all the time with a higher crit rate, and even more stabbing. Earthquake is nice and all, but if I need some room I could just use umbro blow from pelt1.
