I ran out of estus here too. Thankfully, I wasn't embered and I was able to pop one. Go down the elevator opposite the giant room. There's a couple of easy enemies and then it opens a shortcut to the chapel bonfire.

Leveling END isn't really worth it, get it up to 20 and you should be fine for the entire game.
Leveling ViG depends on how badly you're getting your shit pushed in really, if you need it then do it.

General softcaps are 40 into vit/end/main stat
I usually prioritize main stat until 15 or 20 (whichever is used to wield my desired weapon) then pump stamina until "cap." From there I go back into main stat until capped then HP.
Unsure where I learned it from but have been playing the series since DeS, so i must have read it somewhere along the way.
Stam is the most valuable imo. Allows you to dodge more (100% avoidance), swing more before getting tired (less important since DaS3 seems to have a 2-3 hit limit on mobs) and allows you to shield more damage (when you have 100% physical shield).
Also gives you the opportunity to go from blocking to attacking without having to recover as much. HP pumping is only good if you're new/bad at the game and need that extra buffer for accidents. All in all you can avoid damage just by rolling and using i-frames.
Also make sure to keep your equip weight % low so you aren't fat rolling

It's basically just light and fat rolling. Stick to 70% and you're fine (I've found the ratio is weird, I had 70% at one point and fast rolled, then I did it with other equipment at 70% and didn't, was weird).
Blue is just an improvement over what you already have, so blue would be lighter if you're wearing heavy armor.

Technically, it sounds like you're thinking of Vigor instead of Vitality, in this game. Since Vigor is HP, and Vit is equip load. It's a good idea to put a few points into Vit if you plan on using something like a heavy STR weapon, if nothing else so you can tank a bit more. Not everyone cares, I roll through most shit so my armor isn't that important.

Then if you haven't met Patches at all, go up the tower at Firelink shrine, the one you pay 20k souls for. Go straight up to the top with the Firekeeper soul, then go down the elevator and say hello to Patches. He becomes a merchant after you either Homeward or respawn at the shrine. He's up at the top right of the shrine.

I got phase two to 35% maybe 6 times, I have the reflexes but it's VERY hard to dodge the wide sweeping attacks that are consistent, I just had to mash roll to get out of his fat combos. Not to mention I would only have 3/6 flasks by the time it got to phase two, which is harder. If I wasn't too close I could actually dodge a whole combo.
I feel bad, if I gave it a few more tries I could have had it but at that point it was 5am and I had been playing for a long time.

You have to buy back Onion Bros gear from Patches and drop it down the well. From there, you will find him next outside the Dungeon bonfire. There is a sewer entrance and if you go up the stairs there he should be sitting on the floor talking about going in. After that he gets jailed in the dungeon, loot the key on your way out - Go to the Profaned Capital, from the bonfire go down, then take the ladder on the bottom floor. Follow the cave, ontop of the roof there will be a NPC kill it for a miracle, near there is a window run/jump into it, open the cage - Then go fight Yorhm.

Parry and backstab. Or just run through them. A lot of enemies are reliant on parrying and backstabbing to take out, UNLESS you want to lure them out individually every time and circle-strafe them to death. If you cannot parry or backstab consistently practice on the hollows in tutorial area until you can. It's pretty much a requirement separating the wheat from the chafe in this game.

Grab a straightsword with Stance. One of the Stance attacks is a guard-breaker and makes fighting shield spamming enemies a fucking joke. Sometimes you can even get a critical guard-break and visceral them. Either that or grab a small shield. The parrying timing on small shield has a more forgiving startup, and is similar to DS1 parrying, which was near instant. You'll be giving up perfect block mitigation though.

Dark Sword is pretty GOAT, like a broadsword with more reach and GS-like charge. Infuse it with heavy for better STR scaling. Most weapons in this game start with shit scaling to encourage infusing. The only downside is that it doesn't have Stance, which is godly. Stomp is pretty pointless since it seems like they nerfed poise hard as fuck, I've never managed to tank anything with it.
The boss weapons are usually shit, but I fell for the Farron Sword meme and didn't transpose Artorias sword.

You can't parry monster-type attacks or ranged.
Otherwise, you can parry nearly everything with a melee weapon. Some fuckhuge attacks (ie bosses) will just knock you on your ass, unless they're a smaller humanoid boss. Generally though, you can parry all weapon-carrying humanoids (zombies, knights, goatmen...etc). If they're carrying a weapon and have a player-like moveset, it's usually a good sign you can parry them.
As for equipment, check the item descriptions. Parry is literally a skill, and the game will tell you if you can parry. Aside from shields, you can parry with one of the daggers, and also the Farron Sword comes with an offhand dagger that you can parry with if you two-hand/ dual wield it.

If you've got enough stamina left for an R1 (light attack), you'll do a executions style move, during which you are invincble. Game refers to it as "critical attack", which also includes backstabbing. Some rings and equipment give you benefits based on them. AI in DaS3 really bugs me sometimes, because it feels like i am controlling the enemy with my controller. Circling around a knight can to backstab him took me almost 30 seconds once without him reacting, just following my targeting with his shield.

The tower shield enemies are fucking turtling shitters. They wait for you to get close, shield-bash, then follow up. Their shield bashes often have zero telegraphing and come out instantly, so if you aren't purposely baiting a shield bash you'll sometimes get caught without warning. That said, their guard isn't infinite, and you can guardbreak if you have enough END to commit a heavy hit, follow up, and still have enough stamina left to dodge away. But yeah, I get you. The first time fighting those bucket helm cathedral paladins, half the time I was just inching closer to them so I can bait out an attack.

This is why DaS 3 is a good thing though.
Rather than enemies with magnets attatched to their fucking weapons, and retarded-ass hitboxes (DaS 2), it takes a note from DaS, and requires you to use more than 1 fucking weapon the whole game to kill another type of enemy.
Tower Shield? Wait for him to attack, then either parry or roll and backstab.
Ranged? Counter range to stagger, and buttrush with melee.
Non-staggering oppenent? Watch attack patterns, use a faster-paced weapon, and get 1-2 hits in before they resume their attacks.
It's not hard, but people are too fucking stupid to try something new (aka: Great Sworders and Uchigatana users)
