Red Orchestra 2 is probably your safest bet.
There's hundreds of lines of characters whining, moaning, yelling, screaming insults/pain and so on. Final stands in the objective are pretty intense when your teamate gets dropped and gurgles blood for a few minutes or whimpers to mum. The Jap VAs do a really great job, very enthusiastic sounding, and their death screams from flamethrowers are electrifying.

Geneva is more of agreement along the lines of "You don't do the nasty stuff, and I won't do it either, alright?". On a large scale, Geneva works. Gas attacks, mass executions of POW, operations in enemy uniforms and all the other dirty tricks are for the most part not used by conventional armies.
There will always be tons of small violations, but nobody really dares to break it big time because then the other side would also play dirty.

I dunno, I enjoy war games but a game that would truly simulate the horrors of war sounds like a test of willpower than a game.
My family is German, and my grandmother was in Dresden when it was firebombed. The few stories she's told me about the event make me glad I have never even had to worry about experiencing that. She said the bodies were piled over the surface of the water in the Elbe river from people trying to put themselves out. She lost a few brothers to Russian prison camps. Her father some how survived the Russian prison camps.
My great grandfather refused to join the Nazis. He was a free thinker and communist and he and a buddy were thrown into a prison camp not too long after the war started. Eventually he was given the choice to join the army and fight or to rot in the camp. He chose to join cuz he had a family to feed but his buddy didn't so he stayed in prison. My great grand father became an engineer building bridges for tanks and shit. He told my grandmother about going to relieve someone on watch who was frozen holding their binoculars to their face. Sometime around Stalingrad he and some buddies said fuck the war, stole a kubelwagen, and started driving west to go home. They ran right into a Russian patrol and got captured. He survived siberia, somehow. Apparently the Russians were so poor that their officers didn't even have windows on their huts.
After the Russians took east Germany my grand mother ended up working for a local commissar cuz she knew how to type. She said the Russian soldiers spent all day riding the street cars up and down the streets cuz it was so new and high tech to them. They were a nation of peasants after all.
Not sure why you would want to have a near real experience like that but whatever. Most Americans romanticize war because they've never had to experience it on their own soil.
RO2 is pretty fun. I play it every so often for that big WWII feel that is absent from games now.
