Well, if you liked DAI you might Like DAO. Its a pretty straightfoward RPG, you always know what to do next.
The new Shadowrun games are similar in that regard and the combat is lots of fun, I would skip the first one tho.
Sengoku Rance if you dont mind the H scenes.
Neverwinter Nights 2 is also pretty casual, the second expansion is completely different from the main game and is about running a trade company which can be pretty comfy.
Dragons Dogma is a good action RPG and not nearly as difficult as BloodBorne.
Since you mentioned RPGs others might say the Baldurs Gate series and Morrowind but they take a lot of time to get used to and learn the mechanics.

Necropolis released recently. It's a roguelike with Dark Souls/LoZ combat.

Witcher's combat is genuinely terrible. It's a good game overall, but brilliant is a huge overstatement. There is a huge amount of side stuff to do if you're looking to kill time, but most of the side quests aren't very meaty.
As for suggestions, maybe try Gungeon on the PS4. Better with a controller than a mouse. Not super hard, but still challenging.

You can solo everything in Destiny's story mode. Strikes might end up being hard, but you can overlevel for them and I don't think they're required in the story.
If you're planning on getting more than like 2 games out of this thread, PS Plus might be a good idea anyway. Furi looks neat and Saint's Row is chill if you want it to be.

I"ll tell you what I prefer. The flame stream and the shield are no good imo.
I use aard which is a force push. It basically knocks most humanoid monsters and non-dual wielding humans on their back, so you can just walk up and stab them. I also think the shield is crap not just because its ezmode (you just hold the shield and regain health on hit), but because dodging is a faster (and more fun) way of dispatching enemies. To clarify, I'm talking about quick sidestepping, not the roll away dodge. Theres also an upgrade for it that gives you extra i-frames.
For enemies that are immune to force push, I also use a sword skill called rend which breaks their guard. All in all, I find thats the most effective and fun build.
