I don't know what you mean by "part"' but for me it's the huge build and weapon variety
The story and setting is extremely secondary to building and roleplaying characters; the game allows you to build your character in so many different ways and re-build them if you fuck up or get bored. The stat system is the best in all the Souls games (inb4 BAWWW ADP) and the weapon variety, even amongst individual weapon groups is insane. It's fantastic.
I was looking at the Dark Souls III weapons the other day just to see what they had. It's literally like

The part where you fight goblins. That entire area was clearly designed by people who had never even so much as seen a screenshot of a Souls game from afar.
Right at the start, having not played the game yet.
Lost Bastille is the only good area in the base game, and Darklurker is the only good boss.
Overall, the only GREAT part of Dark Souls 2 is the Crown of the Old Iron King. Brume Tower, Fume Knight, and Sir Alonne are fucking god-tier
