JRPGs are a subset of RPGs that are made in Japan. The J has nothing to do with the gameplay, themes, or anything else. Some JRPGs are nearly indistinguishable from non-J-RPGs.

JRPG specifically refers to RPG's from japan, however in context it generally refers to a particular theme of RPG that the japanese tend to make and the west dont.
Dragon's Quest being the go-to JRPG when your comparing themes.
Dark Souls is a japanese RPG game but it's themed around western themes and so you'd never really put it into the JRPG context, you'd just say it's an RPG made by japs.
Dragon's Dogma is similar, western themes.
