I can't find a good picture of it, but I think the most iconic Mario iteration comes from the Super Mario Bros Deluxe time period. His art from that era is just so perfectly Mario.

SMB, SMB3, SMW and SM64 are all pretty close.

Those are easily the top 4 though, nothing else comes close.
