Literally anything you want breh. I started with the default moveset and just kept upgrading it until I wanted something different. I wanted to be a Jackie Chan motherfucker, so I went with the drunken set. It went like

Chin Rocker (get this from the Casino)

Then I got Heel Drop, Step Back Kick for that sweet extra dodge if you need it, Guard Breaker, Charge Punch (I think everyone uses it), and Palm Smash.
Most people use a lot of multi-hit moves that are fast. The Chin Music, Stinging Butterfly, etc move group are pretty good if you're looking to maximize damage.
Or you could be cheap and just keep spamming High Side Kick into a wall when you get a guard break.

It uses one of the sticks for dodges, and the tank controls help emphasize the crowd management and positioning aspect of the game. If you could move and control the camera seperately, most of that would be gone since you could just run around groups of enemies like it's nothing.

I don't mind the grabs by enemies, it just depends on which one grabs me. If a guy is going for a suplex, I don't mind, since that's free damage/i-frames. If it's those faggots who knee you, yeah, I get pretty pissed.
