Personally I have always enjoyed VII the most, I have clocked it more times than the others combined and racked up a fair few hours. I think 1-6 are amazing games, little bit thematically repetitive but they achieve what they mean to. 8 is as good as 7 with a combat/levelling system that was genuinely unique at the time but with the card game getting high level magic early was laughably easy, as were the bosses if you knew what you were doing stat wise. 10 had the best story in terms of relatability and was imo the last decent game of the series. The mmos i never played, 12 was fucking awful. 13 somehow managed to be worse. the spinoffs were a good timesink i guess, that vincent valentine thing was fun for a day or two and i can still remember grinding through crisis core. never finished any of the tactics games, but enjoyed them regardless.
Rambled a bit, VII was the best selling and all round best Final fantasy game of all time.

10 isn't my favorite and has things I detest, but in terms of level of quality and achieving everything they wanted to, it's probably the best one. It was the start of linear, shit based FF games though.
