Akumajou Dracula is a pretty good title in japanese.
But Castlevania is cool for an english title.
Evil Castle Dracula is still cool but sounds a tad bit generic in english.

"Akuma" is more like Evil, not necessarily demon (which in japanese would be oni).

Nah, Akuma is demon, as in the same vein of demonic possession or general wicked non-human entity, aku on it's own is evil/bad. Oni is a very specific entity closer to an ogre or troll orgoblin.

Yeah I guess you're right, I was thinking of Aku, but anyway, "demon" in this case doesn't mean demons as in western christianity lore, as you said it's something that's possessed by something evil or "demonic". It just means the Castle has the evil influence of Dracula.

I vaguely remember there being a range of Castlevania games that had different titles in Japan, they used Akumajou Dracula, Castlevania and some others too, IIRC.
Incidentally, you can see the "Akumajou Dracula Series" above the Castlevania line in that HoD cover.
