4U CB was incredibly boring after the 10th or so hunt.
It was just A charge to get red shield and phials, then shield thrust into AED ad infinitium. Guard pointing was stupid easy from SnS by just hitting X+A and you could do it with no consequence.
Using CB in the demo i'm actually using Axe Mode and guard pointing isn't so braindead anymore.
CB is still good, I got 2 KOs on narga, I would have gotten 3 if I had no cats. You just have to actually utilize everything the weapon has now.

The X+A upswing will launch people into the air, even with the sword falls down behind you. It's used sparingly in Guild style, usually done on smaller openings where you can't do a strong charge but obviously don't fucking do it if somebody is nearby.
Go for the head or the monster's weakest hitzone for most damage. If a weapon that can KO is on the team, leave the head to them. You can cut tails, but do mind those that are charging up an attack or getting into position because once that tail is cut the monster will dash forward instantly and do a 180. In such a case, CB and other GS users among others would be fucking pissed because you whiffed their attacks.

Freedom Unite has some plain broken hitboxes.
But it has a huge amount of content to get into and will get you accustomed to the basics, it will feel a bit archaic if you play the later installments first, however. I'd almost say it builds kind of a "fundamentals" of Monster Hunter if that's even a thing given how unforgiving that game can be at times.
Vanilla Tri removed a lot and kind of fucked over Bowguns so i'd honestly avoid that one altogether in favor of Tri Ultimate.
3U brought back all the weapons as well as the DRASTICALLY improved Gunlance and Hunting Horn.
Water combat turns a lot off people off the game, if you use lance it becomes completely inconsequential.
Portable 3rd is probably the best entry point as it's pretty short and relatively easy. There's a few things that are downright broken and exploitable to hell but aside from that it's my recommendation for a first MH game.
4U switched up the formula by adding in faster ledge climbing, jumping and aerial attacks. Mounting is stupid exploitable and makes the game kind of dumb. But it's still a very good game.
tl;dr Pick any of them but Tri, play Tri U instead if you want to play 3rd gen.

My biggest peeve is the nerf to shield thrust. In 4 vanilla, nobody fucking used ST cuz it was shit. In 4G, ST became viable because of red shield adding phial damage at the cost of no phials. In MHX, the remove ST from two styles which huge considering those two styles add much needed GP's. I love ST, it's quick, follows up after everything, reset combos, and dials really well.
It's a shame that I have to completely change my playstyle foe CB on a move that wasn't even broken when IG, arguebly more OP, only received motion and duration nerfs but plays the exact same way (fish for triple buff, go for mount, XXA for infinity)

I'm a turtlefag so after I block its first charge hitbox it continues doing its dumb crawl towards the wall/corner. Why does the west have so much shit taste when it comes to trailers?
The 4U one was an atrocity and the Generations one is pretty lackluster.
Since I was a kid I always liked the japanese trailers because they let the games sell themselves.
