Final Fantasy X. Re-writing the Sphere Grid is absurd but fun. I spent about 75 hours doing it inthe arena where you capture and re-fight monsters, and grinding the items to alter the grid. The secret Weapon boss actually needs it, that was a tedious fight. Yuna ends up being the strongest with how Summons scale to match her stats and essentially giving her a dozen lives.

Putting dedicated points into defense in a game where you can dodge everything if you're good is wasteful. Natural health/defense gains per level are good enough, and you should be supplementing your offense to give enemies less chances to attack.

As far as I know it's a holdover from D&D and other D20 tabletop systems, where you can only allocate a certain number of stat points. So you maximise the important stats (Strength for fighters, Int for wizards, etc) and put the absolute minimum required in the unimportant stats. It's been adapted to mean making the strongest character technically possible in any given game or system.
