The game will run fine, as intended even, up to a load of ~3.4gb. If you to try to max the game and load the VRAM beyond that, or play in 2K, etc, the speed of the VRAM slows down to sub 10% of its operating speed, forcing the game to pause while the cache catches up. This will happen every time something needs to load. So if you're in a moving environment (such as driving from place to place in GTAV) where assets need to constantly swapped, you get a very annoying stutter.

When I had a 4gb card, it would use all 4. I now have a 6gb card and it can use beyond 4gb when maxed. There's an in-game meter that shows you how much you're going to need with your current settings.
