They're best for suppression and bouncing around corners, imo. Junkrat is at his absolute best in enclosed areas where Pharrah can't get above him, and it helps to throw and detonate a concussion mine when an enemy is at low health.
They're also great to throw and immediately detonate, to push yourself/ your enemy back, if they get too close for comfort. Sometimes you can even use it to get away from Roadhog after being chained, if he screws up, slightly.
I can play almost the whole cast effectively. I play symmetra the most, but I always fill for the team. In competitive, my preferences are:
Offense: Pharah, Genji
Defense: Hanzo, Tobjorn
Tank: Reinhart, Zarya
Support: Mercy
I usually can't justify picking Symmetra in competitive because she's so easily countered, especially in low elo where nobody stops the flankers from killing her teleporter. I'm also working on improving my Zenyatta play, and aim to make him my main healer pick.

Gotta bait people into attacking. Don't try to go toe to toe with bastions or other insanely high damage people because her shield only absorbs up to 200 damage and then breaks (meaning you can absorb a single attack that does more but the shield breaks after)
Just learn her rhythm of shielding and getting into cover to reset your cooldown and recharge your shield's health. Also git gud with following enemy movements at close to mid range. To use Zarya's beam well you need to learn to mirror your opponent. And learn how to arc her grenades well as they do really good aoe damage.
Finally get a team that aren't retards. Zarya will never reach a maximum charge solo so you have to have team mates that are close range taking damage that you can shield. She works the best with reaper rienhardt and mei in my experience. A good Zarya Mei combo is the ultimate in zone control.

I really don't see much use in symetra, how is she played well?
I just see her having piss-ant turrets and a waste of an ult.. because you only can cast it once, and only really need to ult again if its destroyed or need to move.
The shields nice but doesn't seem to be enough. Esp when everyone else has a heal and a buff.

It also lets you know where you are.
Her alt fire can pass through Rinehardt's shield and her normal fire can do a lot of damage if you get close and hold them in the beam.

Wrote this awhile ago for someone online. So I'll just copy paste the whole thing here.
Symmetra is a support/defence character that specializes in controlling flanks and taking advantage of flanking or getting behind enemies at critical moments. She also almost entirely works only on defense maps. She is very hard to use on offense and overall just less important to the push, she can be used offensively (though probably not on control point) but you're mostly better off using a 2nd healer instead or tanking.
Your main goal is not to defend the objective itself with turrets, on some control point maps it might be nice to put some mini turrets up near but really you should be using them near narrow chokes to weaken or kill players going for health kits or charging for your ultimate (which is one of the best ultimates in the game by far). Place turrets in small rooms or the lesser traveled paths or behind weird places to weaken enemies not paying attention. I often do 2-3 per area but if you want to set up a kill zone with all 6, that is viable as well depending on your own personal playstyle. They are obscenely easy to destroy so give some space in between them.
Her right click is actually obscenely powerful when used correctly. First off it auto aims so you only need to be relatively aiming to kill with it. It also amps up it's damage the longer its charged and the damage amp holds for a couple seconds as long as you pick a new target. When you see the enemy team on a point or pushing the payload, get behind them, charge up on the healer and then go to town on everyone else. You can destroy entire teams with this. I have more play of the games as Symmetra than any other character and get them regularly when I play her by using this ability to it's utmost.

Her right click is very strong but weird to use. It goes through shiels that Reindhardt and Winston put up, so just shoot it down regular pathways that enemies will take or corner theyll come around. It goes slow and does high damage. But when it hits it charges your ultimate very quickly. Abuse that especially right at the beginning by charging and shoot a ball before the game starts so the enemy tanks are greated with a light ball to the face. If you do this well you can get that teleporter up before a minute or two into the game.
That brings me to the teleporter. It is paramount that you don't die before you get it up, unless your team can hold out long enough for you to get back, if you die before it goes up you often might as well switch off (unless your mercy is doing her job very well). The teleporter has 6 uses and generally unless you're needed back at a battle ASAP you should try and not use it yourself. Save it for healers and tanks. It is basically a free rez for your team. But place it with thought and care. It can be destroyed easily. Somewhere close to the main defense point but out of the eyes of the enemy if theyre pushing. This teleporter will allow your team to hold positions for much longer than you should. Symmetra combined with a competant Mercy (or Lucio) on defense with the right comp for map is basically an auto win. She excels more on maps with tighter pathways than open space (Hollywood, Hanamura, Temple of Anubis, Numbani) and is slightly less effective on wider defense maps with less chokes to take advantage of(Route 66, Watchpoint:Gibraltar, Volskaya Industries) but I use her on all defense maps to good effect, this is just her strengths.
She's a great hero to play and very interesting if you can get good as her. I definitely recommend learning her if you want to do something more unique for your team.

With the shields, there's not a lot to them, apply them to everyone at the beginning and when you see people come out of your tele. Takes none of your time and can help them a lot.
I'll add as well that with her turrets you can 1v1 a lot of character if they're supporting you during. Barring most tanks you dont have much trouble with any other characters if you have 1 or 2 turrets supporting you (that being you're within range for your left click to be damaging the enemy).
Dont go picking fights with Reindhardts and Roadhogs, unless they are very weak and you feel confident. But a dva or Zarya can be destroyed quickly by you. Ignore winston at all times unless your team is there as he is your direct counter.
Genji's will melt to you 1v1 even without your turrets and even Mcrees cant do much if you close the distance and he used his flashbang. Reapers you might want to keep away from though since closing the distance for your attack to works makes you in prime shotgun range. Tracer is hit or miss, if she keeps her distance you're doing the wrong thing, but if you deal some damage and catch her rewinding and know where she's gonna go you can destroy her fairly easily or at least send her running away for a bit.
As I said before if you get the right positing to jump down and attack a whole team with your left click, find the Mercy or lucio first and then move on to the other targets, never go after tanks as they will kill you before your damage is scary.

And to add to a point about the turrets, they can work in a couple ways. You can create a "kill room" if you want and just place them all there, so if anyone wants to come in there they will almost immediately die or take severe damage. You can place them all around and just use them to be conscious of enemies movement which is basically scouting information for your team. Vocalize when a turret is firing or destroyed so you can tell your team where the enemy is. You can either do this all over the place or in 2 places which I personally choose to do about 90% of the time i play her.
Place about 2-3 turrets per location, scouting information and enough damage to weaken or kill many characters. Place them along the sides of walls or above doorways apart from eachother.
She's obscenely fun to play and has one of the highest win %s of any hero in the game. She is obscenely powerful when used correctly but confusing to someone who doesn't understand her role since it's entirely unlike any character in the game.

Symmetra is most useful when you're playing for time. Her big balls of death act as discouragement against anyone who wants to walk through chokes you're spamming them through, and her turrets pumish and CC anybody brave enough to actually do it. Can they kill people? Not really, which is why she's a support. The turrets slow people down so that your team can take care of them. She pairs well with McCree, Bastion and Reinhart.
As for the teleporter? Treat it like a mercy revive. The ideal time to cast it is right before a teamfight, so that your team can quickly return to the objective if they get wiped. If you just cast it right away, it's not a big deal since you build ult so fast, but as you said, ir's sort of a wasted ult. The longer the teleporter is there, the more likely it will be hunted down.
