You need to tackle it with a different mindset, friend. Slow and steady wins the race. Once you get to Anor Londo (the halfway point of DS1), you'll have a solid grasp of the mechanics.
Head back in there, choose the Pyromancer class, spam fireball when you're backed into a corner, and level endurance and vitality a bunch to compensate early on. Join Solaire's covenant (check some guides) and bask in jolly coop
You'll make it friend, and it's a glorious feeling.

Obviously, I prefer faster combat, exploration focused on tighter level design, and a darker atmosphere.
I don't think BB or DeZ will ever be as highly regarded because most people prefer open ended exploration and loads of RPG elements in their action metroidvanias. But what the fuck do I know, I just prefer my RPGs to be full CRPGs.

Bloodborne was way better, they got rid of stupid mechanics and improved gameplay overall. It also has the best atmosphere and lore.
Just as a personal opinion, its fightclub is the best.

Not so awful, but significantly worse than Ivory. The bosses besides blue smelter and gank squad are cool. Sunken really nails the exploration of a ruined temple part, but I know that maze isn't for everyone. Iron king makes the same mistake they did in many areas of the game, putting stupid enemy formations and similar everywhere.
Still worth playing once, don't hate on them before playing, but know that if you did the last boss of Ivory you're past the high point of the DLCs.

You should try going back. Remember that after the first boss there's a whole lot you can explore and there's no right way to play it. Grind, use spells, etc, but you'll find that you'll eventually make progress if ou keep trying different alternatives like shields, rolling, ranged combat and so on.
