A large part of me feels as though there was a lot planned in terms of additional SP content, but Take Two basically forced Rockstar to do the whole GTAO thing - they initially had no desire to bother going so overboard with it - and all the GTAO stuff probably ate all their time and resources, forcing them to do away with any SP shit.

It's really not nostalgia and being jaded. None of those things you mentioned people would say today avout SA are being said about V so while absoultely true the point is still null. People are complaining about shit like story which they epuld have in SA if it were as bad.
GTA V had a shit story where you get fucked over again and again by the FBI only to ultimately bend over and do what they say again. The others games were always about defying power like that not becoming someone's puppet.
Also R* got flustered they spent so much money on the ending of GTA IV so they decided to implement skipping missions you can't beat. I get it from their perspective but still quite annoying and casual. No more is there that great feeling of accomplishment beating a mission you were stuck on and saving so you never have to again.
This game is forever embedded in one of the best years of my childhood.

The cutscenes were bizarrely short and poorly done, which was shocking given how important they were. The scenes were Roman/Kate dies look like they were done a week before release.
