The Hylian Shield can absorb Ganondorf's lightning orbs (because Lanayru made it).
Conversely if you try to block them with the Mirror Shield, you get hurt.
Also, Mirror Shield can't deflect seeds.

All that happened was the complete opposite, him complaining about the ''waiting'' combat with Wolfos and Stalfos turned out to be him not knowing any way of fighting other than keeping the shield up and hitting enemies when they attack, instead of, god forbid, using a hookshot to stun enemies or a deku nut.
The irony is that you can get hurt with the shield up (Stalfos and Lizalfos' jump attack) so not only is it the slowest method but also not safe.

Regarding speed, the fastest ways to move in OoT are:
1) Rolling - in places where you have to turn a lot, and can't move in a straight line
2) Backwalking - this is fastest when going in a straight line (e.g across hyrule field)
3) Sidehopping - only when done frame-perfectly (i.e not worth it)
