What game do you constantly get back in to?
For me it's modded Skyrim. There's just something about loading it up with 100 hand picked mods that makes every game experience different.

Dude, there is more than you could ever imagine. You can turn Skyrim in to a hardcore survival simulator, where you have to stay warm, fed, and well rested while dodging hordes of souped-up monsters and scraping together loads of new equipment.
I play a Conjuration Mage/Marksman who hunts and camps in the wild while running a farm that generates income. I enjoy earning money, so I have loads of money sinks mods installed. It's really about customising the game to fit your personal tastes.

For me it's Vice City, getting 6 stars wanted level and just picking up a fast car while hearing to 99 luftballons is great fun.

Quests, agreed. They suck. But there are some interesting player made mods, like Wyrmstooth.
Light mods, monster mods, loot mods, and level list changes makes dungeons incredibly intense, with each enemy needing care and caution when approaching.
Loot gets nice and varied with mods like Immersive Armor, Immersive Weapons, and Immersive Looting. Plus, there are mods that changes the skill trees, so you get perks that improve the quality of stuff found.

I love P3 and the SMT games but I always seem to come back to P4G. The atmosphere, music, gameplay I've learned every trick for, incremental progression systems, and general comfy world is always nice to fall back into. Also, it's portable so I can just play it in bed or something.
If they'd make a Persona 3 FES port to the Vita or something I'd be set for a long time. I actually prefer P3 over P4, but having to drag my PS2 out to play FES or play the shitty version that is P3P really reduces the drive to play it. Having P3FES intact or even with more stuff on a portable would be amazing.

This game is so immersive that it killed my father, mother, brother, dog, fish, children and wife. It is just so immersive that I didn't need any of that any more. I was so immersed in the Skyrim world that I lived in it for weeks. I reached level 800. I maxed out my sandcastle building skill. I built a huge castle. I got the "landlord" mod and bought all the properties in Skyrim, including the Blue Palace. I had 72 wives. I became so immersed in the game that I became absolutely addicted. By this point, it had been months. The only times I stopped playing was to eat, sleep and drink. The basic necessities. I played all the big quest mods, I played all the big dungeon mods and I played all the horror mods. I was so immersed for that whole time, I hardly ever considered the fact that I was living my life in the game. I quickly realized that I was running out of things to do in Skyrim. The world was becoming more empty. I was becoming gradually depressed. I tried going on morning walks through the immersive fields of Whiterun, but it seemed that nothing could make me feel better. The depression was too great, and my whole life was just one big existential crisis. It was still immersive, though! I was running out of options, and my character became an alcoholic and a skooma addict. I spent all my money, and sold all my wives, and I had nigh nothing left. I had sold it all for hundreds of thousands of bottles of Black-Briar Mead and skooma. I realized what I had done to myself, but this would keep me going for ages. Surely I would die of old age before I depleted it all. Skyrim doesn't have an aging system for the PC, so I eventually ran out. My character had nothing left but his level 100 sandcastle making skill. I decided to kill myself in game. I ran to the top of High Hrothgar, well, at least I tried to. I was killed by a troll on the way up, as I had sold all my armor and weapons.
