I'd keep at least one or two of every single product because this will make it easier to do the quests. Do a lot of fishing too. Also keep one of every mineral and use gems to win over the hearts of the villagers.

gold stuff are only good for summer and fall with the luau and the fair
also a good thing to note is that not all gold star stuff will give you the best response in the luau
easiest way is to drop a gold cheese or a gold cauliflower into the pot

but the best things to put on display in early game is milk, gold cheese, complete breakfast, gold tiger trout, gold wild plum, gold melon and gold quartz

by the way, starred products mean shit when making artisan goods, like wines or pickles. Save a handful of starred crops for events or gifts and sell the rest of the gold and silver stars. you use the non-starred stuff for artisan goods. Also its nice to start tapping your trees now. get a few oaks, a few pines, and a few maples away from the clutter so you dont accidently chop them and tap them. dont sell them but save them, you will find yourself wanting for them as materials at some point, its likely

It's like harvest moon.
You plant, upgrade your equipment, fish, harvest, mine and all that.
It's slow and fast at the same time. First year ingame has you rushing to make the most out of the time you have. Then second year is comfy with you just taking it slow in your own pace, then you get bored and stop playing it.
Two or three months later, you don't even remember it anymore.
But it's fun while it lasts. Maybe 30 or 40 hours or so. Just don't expect a game with infinite gameplay.

The thing is, you usually have to pick only one of those each day because time is tight. By the mid of the second year you can do more than one, but that's what makes this game last so long, and give it some variation. Tired of farming? Go do something else.

Everything in this game was done by a single guy. He's good at coding, it's one of the high points of the game, everything seems to work properly.

Not much in terms of a story. Your gramps left you a farm, go make it work.
If you don't like harvest moon you won't like this game.
It's repetitive, you keep doing the same things day after day, improving your skills and equipment and optimizing your farm, while making friends with the NPCs. One of the biggest problems of this game (and most harvest moon games) is the lack of a proper endgame content.
It will release on the console in Q4.
