I'd go DS1>DS2=DS3 myself.
Both tow and three have qualities and defects that make them kinda awkward but stilll interesting to me.
The first one is best cohesive package I think. But then I'm part of the people that think not having the teleport for most of the game made it a lot better, so your mileage may vary.
Three has too much of a focus on boss fights to the exclusion of levels. It's not about the world and you confilting relatiship to it, it's about the bosses. The levels are just something in the way.

I don't think the setting was misused, just the narrative. DSII was a step in the right direction: Souls games should've been about a different setting/theme with each iteration like the Zelda games. Had DSII solely been about the DLC; about four kings who desperately tried to fight back the coming Old Chaos, it probably would've turned out pretty alright. But they retread all of Dark Souls 1's stuff and makes it inherently uninteresting.
Thus, DSIII had the job of ending shit outright so it that setting could be over. Bloodborne was fantastic, Soulsy combat in a unique setting with a unique theme and narrative. Miyazaki is reportedly working on another dark fantasy RPG that is unrelated to Souls, I can only hope it's as fresh as Bloodborne.
Side note, I'm 90% certain once DSIII's DLC comes out we'll all be singing DSIII as the best of the lot.

DS1 is a lot tighter because it's designed like an interesting in-between of old arcade games and RPG. With the bonfire standing at the nodal focus of exploration/experimentation. Because it was the re-spawning, the re-furbishing, the re-filling.
Most of the levels of SotS feel like something made for a game like Kings-Field: long term attrition-focused, with save everywhere. That's a problem inherent to DS2 adding healing items on top of the Estus, thus changing he whole design proposition of levels, making them a LOT less tight, because it was becoming a LOT harder to map resources available to the player. And then when when upping the ante in the DLC, basically forcing the hand of the player in using those resources - which again, could have been a great thing... in another game.
I thinok DS3 makes a kinda similar mistake in adding MP/Ashen Estus.
