I have a lot of time on my hands so I wanted to get into some series I've been meaning too. Where should I start with Final Fantasy, Dragon's Quest, Shin Megami Tensai, and Fire Emblem?

Start with FF VI if you like a large cast of characters with assigned classes and an open second half of the game (a lot of optional stuff to do).
Start with V if you want a small cast and enjoy assigning jobs to team members yourself.
Start with Tactics (PSX version!) if you enjoy SRPGs more than normal JRPGs.

I can't say much about FE because I think it is one of the more mediroce SRPG series around but both the GBA game simply titled Fire Emblem and Awakening are good enough entry points, imo (despite what hardcore fans may say about the latter).
Can't go wrong with final fantasy 9 really.

I suggest starting with Dragon quest 8. It's as entry level as it gets and overall a solid title.
Start with the PS2 SMT games:
SMT Nocturne
Digital Devil Saga 1
Digital Devil Saga 2
Maybe Devil Summoner 1 and 2.
Final Fantasy: 3 or 5 if you like strategy, 4 or 6 if you like story, 7 if you want a bit of both and don't mind the graphics.
I've only played DQ8 and didn't like it. I've heard 4 is good. Not really interested.
SMT, start with Persona 3 or 4.
Fire Emblem: Awakening is a decent starting point that's easy to get a hold of, but it's wicked easy and you will get bored. I personally like Radiant Dawn.

You play Persona 1, 2 IS and 2EP first.
I still think FF1 is the best, with FF3 coming close. The other games just have way too much story. I like the idea that in FF1 your party is just whoever you want it to be.
FF4 has got to be my most hated FF. There is basically no customization of your own party and that makes the game really linear. Too bad if you get tired of having a summoner, a mage, a knight, and a ninja in your party. The story dictates how you're going to approach boss fights, so if you fail at one you just fight random enemies until you get better. Also subsequent playthroughs are basically all the same.
FF5 had some story, but it also had the best job system in the franchise to date.
In FF6, jobs were restricted to characters again, but the amount of party members meant that you could still make whatever party you wanted.

Who said anything about difficulty? Persona 1 & 2 duology are good games.
Nocturne is a good starting point because it introduces you to the general mechanics of all SMT games. SMT IV does this as well.
