If you want to be archer, I'd recommend firstly pick a wood elf since they get major starting bonus on archery.
Pick your major skills carefully because they greatly affect your early game experience quite a bit. Ideally you'll pick those skills that your race has a bonus for already. Minor skills are just about as important though, because along with major skills they work towards level progression, so you're gonna pick skills that you're gonna use.
Pick your favored attributes by what most of your major/minor skills are based on.
Usually as a birthmark I go for Steed that gives you movement speed bonus, but if you plan on being magic type, pick apprentice.
Ideally your primary weapon type should have like 40 points right after character creation.
And yeah, I recommend on having only two weapon skills you're gonna level with tops, and one armor type.

There is a lock pick but you just use it and it decides if you were successful. Different lock picks have different amounts if uses and your lock pick skill determines success and if you can pick the lock at all.

Honestly I find Dark Souls just boring and frustrating, not fun. Your toon is too slow and the enemies attacks are too punishing that you more or less have to turtle to get through the game unless you have precognition of boss/enemy movesets and that's no fun. As someone who was raised on DMC3 I'm much more prone to rushing up to an enemy and punching him in the dick.
Bloodborne is much better in that regard because it's focused on fast combat, offensive strategies and dodging.
