If you get the Wii U one, you get some more characters and a bunch of maps, along with being able to play as Ganon in a few challenge missions.
If you get Legends, you'll get everything the Wii U version has, DLC included, aside from the Challenge mode, along with more characters and another Adventure map.
Also a fourth tier of weapon upgrades somewhere, I'm pretty sure. Haven't gotten that far yet.

Most warrior games have a pretty good story mode and a lengthy extra mode to go through.
And the extra mode and ways to strengthen your character outside of leveling generally change each game, so it doesn't get repetitive.

A-rank damage requirements for most Adventure mode maps is 4000. A couple missions it's 8000, and the most difficult missions(usually near the "Defeat the Demon King" square) are 10000. KO requirements are almost always 1200 when applicable. Clear time requirements are 15 minutes for standard missions, and 7 minutes for challenges(kill giant bosses, defeat all enemies, etc.)
Skulltula requirements are always 1000 KOs for the first one to appear, then the second one is 1200 KOs, less than 1600 damage, and either take 5 keeps or get 150 KOs using special attacks.

Ambition Mode isn't padding, you can gain your characters much more easily. HW gives you the same missions on the same maps over and over again, only some are on easy, normal and hard. At least in Ambition Mode you can set the difficulty right there and then. And DW8 doesn't have shitty bosses that slow down the gameplay.

In the overworld and in the pub, there are "quests" which are pretty much missions ala Musou. Also the game is getting more quests like this and Bosses battles with the updates
Btw there is a coop mode for both local and online mode, which is crossplay for all version (PS3, Vita and PS4)
